At the recent AD (Architectural Digest) show in New York City, Jenn-Air introduced a new line of 15″ wide modular cooking products including:

By converting the cookware into the heat source, induction technology offers fast, efficient and highly responsive cooking power. The Jenn-AirTM induction module features a flexible element to accommodate various sized cookware and glass touch electronic controls.

Induction Wok module

This unique modular induction wok features a concave design to cradle a round-bottom wok. With an element that delivers up to 3,600 watts and the high efficiency of induction technology, it provides powerful and effective wok cooking. Additional features include pan detection and glass touch controls.

Both the cooktop and wok modules feature pan detection, which detects cookware before enabling an element, and automatically turns off the element 30 seconds after cookware is removed. Both a Jenn-Air round-bottom and flat bottom wok will be offered as accessories for the induction modules.

Originally available on its Pro-StyleⓇ​ soon be available as a 15” module. Its chrome infused surface combined with 1,800 watts allows for faster cooking while radiating less heat in the kitchen. In addition to its durability, the chrome surface is easy to clean and maintains its sleek, shiny appearance. A white LED backlit knob indicates when the griddle is on.

Featuring the most powerful BTU output offered by Jenn-Air, the 20,000 BTU commercial-style, dualring burner on this module can sear, create a rapid boil or achieve high heat for wok cooking while also achieving an ultra-low 700 BTUs, gentle enough to melt chocolate or butter without scorching.

This 2-burner modular gas cooktop features two elegant, brass 15,000 BTU burners including a dual-stacked PowerBurner that provides two levels of flame to handle a range of cooking methods, from high-powered searing and boiling to gentle simmering. An included wok ring fits securely on top of the grates to accommodate a wok.

4″ Downdraft strip

Featuring a sleek 4” width design, a 350 CFM blower capacity and tap-touch backlit controls, this downdraft vent works with any cooktop module to keep the air clear without interrupting kitchen sight lines. For those in spaces that preclude access to exterior venting, the vent is convertible to duct-free ventilation that uses a filter to efficiently capture smoke, grease and moisture.

In the early days of built-in refrigerators there were very few choices. Sub-Zero gets credit for creating this category in the mid-late fifties. It took a while for the category to grow into what it is today. At one point Sub-Zero was synonymous for built-in refrigerator, and even today they are clearly a market leader. However, many other brands now offer a variety of choices in built-in refrigeration. Here are a few:

Bosch, Dacor, Electrolux, Jenn-Air, KitchenAid, Miele, Monogram, and Thermador

Sub-Zero pioneered the traditional built-in refrigerator which, for our purposes, is a refrigerator with a cabinet depth no more than 24″. Early on the brand offered a choice of stainless steel fronts or models that would accept slide-in cabinet panel fronts to match adjacent cabinetry (overlay models).

Eventually, built-in refrigerators were developed that had hidden hinges and accepted cabinet panel fronts that were flush with adjacent cabinets. These refrigerators were fully-flush “integrated” refrigerators.

In 2000 at the CES (Consumer Electronics Show), LG Electronics introduced the first internet-enabled refrigerator. The refrigerator had a color TV screen on the outside along with many hi-tech features, and a price tag around $20K. About the same time Electrolux launched the ScreenFridge. Some years ago, I was handling appliance sales to a large homebuilder who was building a big (16 home) model home complex for a huge planned community. They wanted one home to contain a kitchen complete with authentic commercial appliances. They'd done some research and had some brand choices such as a Traulsen commercial refrigerator and a Vulcan restaurant range. These brands are indeed products you might find in restaurants, and large institutions, but they are not built for a home kitchen.

I pushed back, but they insisted so I connected with a restaurant supply company, got the literature, specs, pricing, and then met with the homebuilder. When I presented the refrigerator, I asked if they wanted the compressor located inside or outside the house. I explained that the refrigerator manufacturer offered an external compressor and condenser package to reduce the noise and heat from the refrigerator.

I informed them that they would need to run a larger than standard gas line to the home for the commercial range, that they'd need to provide some extra insulation in the wall behind, and pointed out that the 34″ deep range would stick out considerably into the kitchen from their 24″ deep cabinets. The parts only warranty that came with these products might not even apply since these appliances were not built for residential use. Needless to say, their plan for “true” commercial appliances was scuttled.

Tips and Advice for Taking Care of Your Ice Machine

Ice machine

Freestanding Ice Machines that produce clear ice will require regular cleaning and maintenance. The basics are the same for most brands with the exception that some ice machines have automatic cleaning and will require less maintenance. Here are some considerations:

  1. Water filters. While using filtered water is not always necessary, it's a good idea. Some ice machines come equipped with their own filters that must be replaced regularly. If not, you can always install a standard inline water filter on the incoming water line. Replace the inline filter at least every 6 months.

  2. Cleaning the icemaker should be done every 3-6 months depending on usage and manufacturer recommendations. If the ice cube harvest drops or the ice cubes are cloudy, it's a good sign that your ice machine needs cleaning. Typically, ice machines with built-in cleaning cycles require less frequent cleaning. Here are the steps to follow when *cleaning ice machine:

a). Turn off and unplug the ice machine. Turn off the incoming water supply.

b). Remove all the ice from the ice compartment and wipe out the interior.

c). Remove all the ice machines parts that come into contact with water. Clean all the parts with nickel-free ice machine cleaner. Rinse off and let the parts fully dry.

d). Re-install all the parts and making sure that the ice machine is completely dry.

e). Turn on water, plug-in ice machine and turn on. Discard the first batch or two of ice.

*These are general instructions. By all means follow the directions that come with your specific ice machine. Take good care of your ice machine and you'll enjoy a regular supply of crystal clear ice for years to come.

How clear ice machines work

Ice Cubes

Manually, ice is made by filling ice trays with water and placing them in the freezer compartment. With automatic refrigerator ice makers, we automate the process used to make ice manually. Instead of filling trays, water is piped into a tray in the freezer and the zero degree temperature freezes the water. The cubes are then dumped into an ice bucket.

However, with clear ice machines the ice making process* is substantially different. Water is sprayed onto a cold plate that is kept at 32 degrees Farenheit. Since water freezes at 32 degrees, the water freezes against the cold plate while chemicals and other contaminants fall off, leaving nothing but the clear cubes which are then dropped into the ice bin. The machine continues making ice until the bin is full.

The clear cubes consisting of healthy, pure water are always ready for use, and they never stick together or require breaking apart. That's because the ice bin is not a freezer compartment. The ice cubes are continuously melting and being replaced with new ice cubes. The resulting water is continuously sent out the drain. Depending on the brand and feature set that you select, some ice machines will also produce crushed ice, ice that is chewable, and even colored ice.

Just as your refrigerator ice maker, clear ice machines have filters that regularly need replacing. In addition, they need to be cleaned every 6 months (varies with make and model).

This is not an appliance you should just pick-up at the home improvement chain. There are many factors to consider and some planning to do before making a selection.   1. Clear ice machines are expensive. Major name brand clear ice machines start at around two thousand dollars, and premium models can be much higher.

  3. In addition to a water line, clear ice makers also require a drain. Depending on the location, a pump may also be required to pump water to the drain.
