At the recent AD (Architectural Digest) show in New York City, Jenn-Air introduced a new line of 15″ wide modular cooking products including:

By converting the cookware into the heat source, induction technology offers fast, efficient and highly responsive cooking power. The Jenn-AirTM induction module features a flexible element to accommodate various sized cookware and glass touch electronic controls.

Induction Wok module

This unique modular induction wok features a concave design to cradle a round-bottom wok. With an element that delivers up to 3,600 watts and the high efficiency of induction technology, it provides powerful and effective wok cooking. Additional features include pan detection and glass touch controls.

Both the cooktop and wok modules feature pan detection, which detects cookware before enabling an element, and automatically turns off the element 30 seconds after cookware is removed. Both a Jenn-Air round-bottom and flat bottom wok will be offered as accessories for the induction modules.

Originally available on its Pro-StyleⓇ​ soon be available as a 15” module. Its chrome infused surface combined with 1,800 watts allows for faster cooking while radiating less heat in the kitchen. In addition to its durability, the chrome surface is easy to clean and maintains its sleek, shiny appearance. A white LED backlit knob indicates when the griddle is on.

Featuring the most powerful BTU output offered by Jenn-Air, the 20,000 BTU commercial-style, dualring burner on this module can sear, create a rapid boil or achieve high heat for wok cooking while also achieving an ultra-low 700 BTUs, gentle enough to melt chocolate or butter without scorching.

This 2-burner modular gas cooktop features two elegant, brass 15,000 BTU burners including a dual-stacked PowerBurner that provides two levels of flame to handle a range of cooking methods, from high-powered searing and boiling to gentle simmering. Cooking with Gas: Sealed Burners vs Open Burners

Pros and Cons of Sealed vs Open Gas Burners

Burner Types

There are two styles of surface burners for gas ranges: open burners and sealed burners. Imagine a range top as a single piece of metal with holes punched in it just large enough to accommodate a gas line for each of the burners. This cooking surface would have sealed burners. Any spills or debris would contained on the top.

Some cooking surfaces have large openings for each burner so that the entire burner sits in the center of the hole with open space around and below the burner itself. This is an open burner configuration.

There are advantages and disadvantages with each system. Industry veterans often have strong viewpoints prefering one or another. If you are confronted with this decision, here are some criteria to help you choose.

Cleanability

There's no doubt that sealed burners are easier to clean than open burners. Spills are captured on the cooking surface where they can be wiped up, and the burners themselves can also be cleaned with ease. On the other hand, when spills occur with open burners the spill will fall into the hole surrounding the burner. Fortunately, there is a metal sheet below to catch any spills. Cleaning the burner itself can be time consuming and depending on use may be required often.

Appearance

Open burners expose the underneath of the top, and are generally going to have more of an industrial, restaurant-look. Sealed burners will not show anything below the top, and be less obtrusive than the bulky open burners.

Cooking Results

There's lots of debate here. Chefs will brag about the air surrounding the open burners creating more heat, greater flexibility, and better overall control. Tests confirm some advantage here, but as they say, “your results may vary”. Sealed burners are by far the most popular, and few users complain about the lack of air circulation affecting cooking results.

Conclusions

If you do a lot of cooking and are used to using the open burners of commercial-type ranges or rangetops, you're probably going to want to stay with open burners. It's worth noting that open burners can be synonymous with professional or commercial-style appliances that are likely to have a steep price premium.

For convenience and low maintenance, sealed-burners are the obvious choice. Over the years, there have been some advances in both sealed and open burner technology. For example, Viking has recently launched a new sealed burner that is claimed to have a commercial heritage.

Some years ago, I was handling appliance sales to a large homebuilder who was building a big (16 home) model home complex for a huge planned community. They wanted one home to contain a kitchen complete with authentic commercial appliances. They'd done some research and had some brand choices such as a Traulsen commercial refrigerator and a Vulcan restaurant range. These brands are indeed products you might find in restaurants, and large institutions, but they are not built for a home kitchen.

I pushed back, but they insisted so I connected with a restaurant supply company, got the literature, specs, pricing, and then met with the homebuilder. When I presented the refrigerator, I asked if they wanted the compressor located inside or outside the house. I explained that the refrigerator manufacturer offered an external compressor and condenser package to reduce the noise and heat from the refrigerator.

I informed them that they would need to run a larger than standard gas line to the home for the commercial range, that they'd need to provide some extra insulation in the wall behind, and pointed out that the 34″ deep range would stick out considerably into the kitchen from their 24″ deep cabinets. The parts only warranty that came with these products might not even apply since these appliances were not built for residential use. Needless to say, their plan for “true” commercial appliances was scuttled.

When building a home or re-designing a kitchen, homeowners can be faced with the choice of installing a single kitchen range vs. a cooktop and a separate wall oven. Here are a few considerations:

Advantages and disadvantages of a kitchen range

Freestanding-Range

This is a simple decision. Choose the range and you've purchased two appliances at once. No worries about locating two separate appliances, choosing among various dimensions eg, 30″ vs 36″, or running gas and/or electric lines to separate locations.

On the other hand, you'll be locking yourself into 2 separate appliances in a single space which may be inconvenient. You could find yourself needing to cook on the range surface while standing in front of a hot oven. Some people find that repeatedly bending over to access the oven is uncomfortable.

Advantages and disadvantages of a separate cooktop and oven

One big advantage is that by purchasing the cooktop and oven separately, you can get exactly the features you want in each appliance. Also, separate appliance purchases may sometimes result in different brands sizes and fuel types of cooktops and ovens. By having a wall oven installed at eye level, it can be operated and accessed without bending over.

In most instances, separate cooktops and wall ovens will cost more than a comparable freestanding range. Having remodeled kitchens in two different homes in the last 5 years, we've chosen both configurations. We love our current double oven range with radiant top. However, the separate gas cooking surface and combination wall oven/microwave probably edges out the freestanding range. Viva la difference!

Gas fuel is probably the most preferred cooktop fuel type for pro chefs and enthusiasts alike. They like the instant on and off, the infinite control from low to high and the high heat that is often available on professional duty cooktops and rangetops. We distinguish cooktops, which are inserted into kitchen counters and have controls on the top, from rangetops which have the cooking surface on the countertop, but with knobs located on the cabinet front.

Cooktops and rangetops alike come in a variety of widths from 24″ all the way up to 60″. Cooktops are designed to fit into a standard 24″ deep countertop, and are usually no more than 20″ deep. Cooktops can be made of glass (gas on glass), porcelain, or stainless steel. Rangetops are built on a stainless steel chassis, and can offer a variety of cooking options including grills, griddles, and even French tops. 30″ cooktops are mostly 4 burner models, while 36″ cooktops are likely to have a 5th burner in the center. Sometimes, gas cooktops and rangetops will feature power burners with a higher *btu output than the standard 8-10,000 btu rating. While there are a few cooktops and rangetops that have open burners, sealed burners have become standard for most. Sealed burners offer advantages, and in particular are easier to keep clean than open burners.

Choosing a cooktop for your kitchen

If you are remodeling or building new, one of the kitchen choices you may have is separate cooktop and oven configurations vs. a freestanding or slide-in range which combines the cooking surface and oven into a single appliance. If you choose a cooktop and oven layout, you'll have myriad cooktop options in size, fuel type, brands and venting.

Sizes

In general cooktops are made in 24″, 30″, 36″, 48″, and 60″ width usually designed to fit in a 24″ deep base cabinet or island. A 24″ wide cooktop is compact; something you might expect to find in a studio apartment for example. A 30″ 4 element/burner cooktop is a common cooktop size for most starter homes. It gives the homeowner the same size cooking surface, typically 4 gas burners or electric elements, that they'll find on standard size ranges.

For additional burners or a griddle, you're probably going to want at least a 36″ cooktop. Make sure to let your designer know early in the process in order to accommodate the larger cooktop width.

For heavy duty cooking, or special needs such as deep fryers or grills, you may elect for even a larger cooktop 42″, 48″, or even 60″. Of course, modular units can be assembled in a variety of widths.

Fuel Types

Gas burners or electric elements represent the vast majority of all cooktops. Gas will be natural gas or in some cases, propane. Standard electric elements are coil, though they are increasingly becoming rare, or glass smooth top where the element is underneath the glass. Induction cooktops have been around for a while, and are becoming very popular.

Induction cooktops use a magnetic force to create heat. They generate heat very quickly, and much like gas, induction reaches full power and turns off quickly. Of course, induction has the advantage of no flame.

“Dryers are one of the most common household appliances and the biggest energy users,” EPA Administrator Gina McCarthy said in a recent statement.

First, if you have a choice between a gas or electric dryer, you should choose gas. It's much less expensive to run a gas dryer than electric. However, if you have no choice between fuel types consider one of the new heat pump dryers. They'll save you money on electricity and they need no venting, but they are pricey. Here are a few other considerations when choosing a dryer that can help save energy:

  1. Auto-termination. Dryers that shut off when they determine your clothes are dry rather than basing cycle termination on a specific run time will save energy.

  2. Moisture-sensing. Dryers that have a moisture sensing capability and shut down based on moisture in the drum, rather than time or heat sensing will save even more energy.

  3. Insulated dryers. Some dryers have insulation which does a better job of keeping the heat inside the dryer. This also contributes to energy efficiency.

  4. Reverse tumbling. Dryers that have reverse tumbling do a better job of separating the clothes which allows clothes to dry thoroughly and more quickly.

  5. Improved vane design and tumble action. Some dryers include redesigned drums and vanes that create more lift in the clothes and reduce drying time.
