Cool, Refreshing, Healthy 4th of July Recipe

Enjoy the Fourth of July with Your Family

Arizona Wholesale Supply will be closed next Monday, July 4th so that our associates can enjoy the Holiday with their families. Here's a great recipe for your celebration on the Fourth from Chris Scheuer that I came across while browsing our supplier websites.

Chicken-Nicoise-Salad

This recipe caught my eye because, I'd been thinking of grilling vegetables as part of our menu on the 4th. I love grilled vegetables. I keep them crunchy, but get some nice grill marks on them, and they make a really colorful, and flavorful addition to the protein of choice. In this recipe, hamburgers or hot dogs are replaced with chicken for a lighter, healthier approach:


Grilled Chicken Nicoise Salad

Makes 4-6 servings
INGREDIENTS
For the chicken
1 1/2 pounds boneless, skinless chicken breasts
2 tablespoons kosher salt
1 tablespoon sugar
4 cups water

For the dressing
1 cup fresh basil leaves, tightly packed
Finely grated zest from 1 medium lemon
3 tablespoons fresh lemon juice
1 medium clove garlic, crushed
2 teaspoons anchovy paste
1 tablespoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1 cup extra virgin olive oil

For the salad
1 pound small red potatoes, cut in bite-size pieces
3/4 pound long, thin green beans
3/4 cup Nicoise or Kalamata olives, drained
4 medium Roma tomatoes, halved, each half cut in quarters
4 large hard boiled eggs, peeled and halved
1 large head bib or butter lettuce, leaves separated, washed and spun dry

DIRECTIONS
For the chicken, combine 4 cups cold water, 2 tablespoons kosher salt and 1 tablespoon sugar. Stir until the mixture is clear and all salt and sugar have been dissolved, about 30 seconds. Add the chicken and place in refrigerator for at least 1 hour and up to 4 hours.

While the chicken is brining, make the dressing. Combine basil leaves, lemon zest and juice, garlic, anchovy paste, Dijon mustard, sugar, salt and pepper in the bowl of a blender or food processor. Blend/process till the basil is finely chopped. Slowly add the oil while continuing to blend/process. Stop when all the oil has been incorporated and the dressing is smooth. Transfer to a glass jar or container with a tight fitting lid. Set aside. Dressing can be made up to 24 hours in advance. Shake well before serving.

Place the potatoes in a medium-sized saucepan. Cover with water and add 2 teaspoons kosher salt. Bring to a boil, then reduce to a steady simmer and cook for 8-10 minutes or until potatoes are fork-tender. Drain well and transfer to a bowl. Drizzle lightly with extra virgin olive oil and toss to coat. Season lightly with kosher salt and freshly ground black pepper. Set aside.

Place the beans in a gallon sized plastic zippered bag. Add 1 teaspoon of water and close bag, leaving a small opening for steam to escape. Place bag in microwave and cook on high power for 3 minutes or until beans are crisp and tender. Drain the beans and place in a bowl. Drizzle lightly with extra virgin olive oil and sprinkle lightly with kosher salt. Toss to coat.

Preheat your Gas Grill to a medium-high heat.

At about the same time you start the grill, remove your chicken from refrigerator, drain and pat dry with paper towels. Drizzle the chicken lightly with extra virgin olive oil and sprinkle lightly with kosher salt and generously with black pepper.

Brush and oil the grill grate of your grill. Arrange the chicken on the grates and grill for 3-4 minutes per side or until light golden brown and an instant thermometer registers 160˚F. Remove from the grill and drizzle with a bit more olive oil and tent with foil for 5 minutes. Slice and serve warm or at room temperature.

To serve, line individual plates or a large platter with lettuce leaves. Arrange the chicken, potatoes, green beans, and remaining salad ingredients over the lettuce. Serve with dressing on the side.

Surviving Holiday Stress

The holidays can be a very stressful time trying to get the decorations up, rushing around buying presents for everyone, baking holiday cookies for your children’s bake sale, preparing for family to come into town, getting ready for Christmas dinner. The list is endless when it comes to this time of year and it can sometimes feel like you just want to throw your hands up in the air and run away from it all. Finding ways to step back and de-stress might seem impossible but it’s not if you keep a few mental exercises in mind while preparing for the holidays.

 

Try to keep perspective throughout this stressful time. It can be easy to forget that this time of year represents a small sliver of the year as a whole. Meaning is found where you want to find it, and although this time of year can be meaningful, don’t forget that the rest of the year is meaningful too. It is likely that as much as you feel like a ball of anxiety, there are many others out there doing the same thing, and in so doing lose the meaning of Christmas to stress.

 

Don’t let your preconceived notions of what the holiday season should look like get in the way of your execution. Traditions can be hard to give up, but think about the ones that matter most to you and your family and do away with the ones that are only holding you back and draining your time and energy. This season “shouldn’t” look any certain way so allow yourself to let go of those expectations and do what truly makes you and your family happy and holds true meaning.

 

Be sure to plan out your holiday season carefully. Keep in mind all that you will have to do yourself for the season and then take a hard look at the different holiday parties you’ve been invited to. It may sound fun to be able to attend every event, but pretty soon they are all the same and you are taking time away from other areas of your life which can put a real strain on you. Choose your holiday parties wisely.

 

These are just a few ways to help you mentally prepare yourself for the holiday seasons. Don’t let your anxiety and stress drain the meaning and happiness that this time of year is supposed to offer. Allow yourself to enjoy this holiday season!

While the term Black Friday is traced back to 1961, the practice of retailers opening early on the day after Thanksgiving goes back even further. It's quite simply the beginning of the Christmas shopping season. Retailers have regularly used “doorbuster's” to lure customer's on Black Friday. These limited offers are accompanied with lines and pushing and shoving, but they do attract shoppers eager to cash in on a low price item. Of course, retailers want the shoppers to visit their store for the doorbuster and hang around to complete their holiday shopping.

Eventually, one retailer broke the early 8:00 AM openings by opening at 7:00 AM, followed by a competitor at 5:00 AM and the craziness began. Now, we have Gray Thursday with major retailers opening on Thursday afternoon. How's that working?

* The 2014 Gray Thursday sales were, in general, a failure, as overall sales for the holiday weekend fell 11% compared to the previous year despite heavy traffic at the stores on Thanksgiving night.

The whole thing has turned into a mess. Retailers have to pay all the costs of being open on the holiday, labor costs, extra advertising expenses, and etc. It's all because each one wants to get the jump on the other. For what? Shoppers are purchasing whatever they're going to purchase. Spreading it out over an extra sale period accomplishes nothing.

In the case of appliances, the big brands officially started Black Friday pricing back on November 4th, and will be running their specials through December 2nd. For those who must leave the Thanksgiving table before dessert to get their early shopping fix, check out this all-in-one appliance package at your local discounter.
