Cooking modules are individual drop-in countertop units that may be installed and used as single purpose units, or combined with other modules to provide a more complete meal preparation solution. The big advantage is that modules can be installed anywhere that gas or electric service can be provided, and the mix and match approach gives homeowners the option of having their own custom configuration. For example, a power gas module with wok ring could be installed adjacent to an oversized chrome-infused electric griddle, which might be next to a two burner gas module. Here's an example from Jenn-Air below:

If you want to add indoor grilling, the configuration below from Wolf offers a wok module, next to a grill module, next to a 4 burner Wolf gas cooktop.

Finally, luxury European brand Gaggenau offers an in-counter steamer as part its collection of modular cooking elements.

Both Jenn-Air and Gaggenau also have flush downdraft vent options to remove steam and smoke at the source. Wolf has a retractable rear downdraft vent which may work depending on the width of your modules. Of course, overhead venting may be used with all brands. KitchenAid gets the nod for the early adopter that began promoting its Black Stainless Steel appliances, but it takes more than one brand to get a new appliance finish past the experimental stage (Anybody remember Jenn-Air Oiled Bronze appliances?)

But now, we've seen Whirlpool, Maytag, Samsung, and Dacor join KitchenAid in the Black Stainless Steel club. Word has it that Frigidaire is entering the Black Stainless Steel parade with it's full line, including entry level models. It looks like an appliance party to me.

Black Stainless Steel is fingerprint resistant and is made of a stainless steel treated with a chemical baked on at 1200 degrees F for several hours. It's neither painted nor is it part of the stainless steel itself. While it should be durable, it is nevertheless, something applied to a sheet of stainless steel.

Black Stainless Steel has been touted as a color/finish that can be mixed in with other appliances. There is, however, some concern that the Black Stainless Steel on KitchenAid does not match the finish on Samsung which has a shiny coating.

It's been a challenge for other colors and finishes to take the place of stainless steel. There are some interesting alternatives out there such as GE's Slate and a host of custom order bright appliance colors from luxury brands such as Bertazzoni, BlueStar, and others. Even with all the choices currently available, industry data shows that Stainless Steel is actually gaining in popularity against the others.

While industry veterans are by nature skeptical, Black Stainless Steel could be just the change that consumers have been wanting. Long Live Stainless Steel and Welcome Black Stainless Steel.

At the recent AD (Architectural Digest) show in New York City, Jenn-Air introduced a new line of 15″ wide modular cooking products including:

By converting the cookware into the heat source, induction technology offers fast, efficient and highly responsive cooking power. The Jenn-AirTM induction module features a flexible element to accommodate various sized cookware and glass touch electronic controls.

Induction Wok module

This unique modular induction wok features a concave design to cradle a round-bottom wok. With an element that delivers up to 3,600 watts and the high efficiency of induction technology, it provides powerful and effective wok cooking. Additional features include pan detection and glass touch controls.

Both the cooktop and wok modules feature pan detection, which detects cookware before enabling an element, and automatically turns off the element 30 seconds after cookware is removed. Both a Jenn-Air round-bottom and flat bottom wok will be offered as accessories for the induction modules.

Originally available on its Pro-StyleⓇ​ soon be available as a 15” module. Its chrome infused surface combined with 1,800 watts allows for faster cooking while radiating less heat in the kitchen. In addition to its durability, the chrome surface is easy to clean and maintains its sleek, shiny appearance. A white LED backlit knob indicates when the griddle is on.

Featuring the most powerful BTU output offered by Jenn-Air, the 20,000 BTU commercial-style, dualring burner on this module can sear, create a rapid boil or achieve high heat for wok cooking while also achieving an ultra-low 700 BTUs, gentle enough to melt chocolate or butter without scorching.

This 2-burner modular gas cooktop features two elegant, brass 15,000 BTU burners including a dual-stacked PowerBurner that provides two levels of flame to handle a range of cooking methods, from high-powered searing and boiling to gentle simmering. An included wok ring fits securely on top of the grates to accommodate a wok.

Featuring a sleek 4” width design, a 350 CFM blower capacity and tap-touch backlit controls, this downdraft vent works with any cooktop module to keep the air clear without interrupting kitchen sight lines.   1. Narrow the field. If your builder has a list of models and packages that are available to you, part of your work is already done. Don't waste time looking at brands or models that aren't available for the home you are purchasing. Even If you are building a custom home, there will still be some constraints based on the size of your kitchen, location of gas, water, and electric lines, etc.

  2. Budget and plan accordingly. If it's been a number of years since you purchased major appliances, get prepared for some sticker shock. Today's appliances will save money on energy usage, and still are a very good buy when factoring inflation over the years. However, when you want a built-in refrigerator, combo ovens, and other premium appliances such as wine storage units, built-in warming drawers, steam ovens and coffee makers, you're going well into 5 figures ($XX,XXX.XX).

The industry's first downdraft induction cooktop will be shipping from Jenn-Air later this year. Equipped with powerful induction elements, and the legendary Jenn-Air center downdraft system, this innovative cooktop builds on Jenn-Air's cooking legacy.

A pioneer in induction cooking, Jenn-Air, had an induction cartridge for its modular downdraft cooktop back in the '80's, and later a hybrid four element glass cooktop with two induction elements and two radiant elements.

Jenn-Air's all new 36″ downdraft induction cooktop offers all the benefits of twenty-first century induction technology combined with the advantages of proximity downdraft ventilation. It's literally two appliances in one.

Gas Cooktops

Gas fuel is probably the most preferred cooktop fuel type for pro chefs and enthusiasts alike. They like the instant on and off, the infinite control from low to high and the high heat that is often available on professional duty cooktops and rangetops. We distinguish cooktops, which are inserted into kitchen counters and have controls on the top, from rangetops which have the cooking surface on the countertop, but with knobs located on the cabinet front.

Cooktops and rangetops alike come in a variety of widths from 24″ all the way up to 60″. Cooktops are designed to fit into a standard 24″ deep countertop, and are usually no more than 20″ deep. Range tops overlap the countertop front, and may go all they way to the back of the counter, taking up the entire 24″ counter depth.

Cooktops can be made of glass (gas on glass), porcelain, or stainless steel. Rangetops are built on a stainless steel chassis, and can offer a variety of cooking options including grills, griddles, and even French tops. 30″ cooktops are mostly 4 burner models, while 36″ cooktops are likely to have a 5th burner in the center. Sometimes, gas cooktops and rangetops will feature power burners with a higher *btu output than the standard 8-10,000 btu rating. Also, some cooktops will have super low simmer burners going down to 1,500 btus. Modular cooktops over a wide array of options.

While there are a few cooktops and rangetops that have open burners, sealed burners have become standard for most. Sealed burners offer advantages, and in particular are easier to keep clean than open burners.

One of the reasons for buying an induction cooktop is the amazing speed that you get with induction cooktops. By all means, your new cooktop should have a power burner which will bring water to a boil as fast as lightning. Seriously, ask your sales associate what the wattage is on the largest induction element. It's not a perfect measure, but is a good indication of what kind of speed you'll have. But let's face it, ALL of these cooktops are going to beat any conventional cooktop on time to boil. Jenn-Air touts a “fastest to boil” feature on their power element.
